Vasanthi, after mixing the besan, suji and curd, do you immediately add the other stuff and make it or do you keep the dough for a little bit and then make it? I don't know if keeping the dough for a little bit will make a difference to the fluffiness of dhoklas?

OK, now I have tried the recipe and for ENO, you CAN substitute Alka Seltzer original tablet which has a long shelf life.

Instead of ENO, I substituted ONE powdered tablet of Alka Seltzer original. Just like with ENO, you add the powder to the top of the dough, sprinkle some water on it and you will see it fizzing and working. Then you mix it in lightly (not too much) and proceed with rest of recipe. I tried this and I got fluffy dhoklas. Whenever you need ENO, you can substitute Alka Seltzer original tablet.
